Dosage of BL -Cake Improver :
 
0.02-0.2 % on egg weight basis

Improves the emulsifying properties, more air is retained which means higher volume
Better aeration in the cake batter has a positive influence on the cake structure. The result can create fresher, softer cakes with improved crumb texture
Reacts with the starch helixes in the mixture, causing the starch to retrograde more slowly resulting in a softer crumb

BL-cake Improver is available in 5 kg and 25 kg fiber drum and can be packed as per the customer’s request
 
Storage and Handling  Precautions:
 
Store it in a cool place and avoid keeping it in direct sunlight. At 50oC the activity loss after one year should not be more than 5-10 %
Enzyme dust may cause irritation when inhaled. Unnecessary contact with the product should be avoided. In case of spillage or contact with eyes or skin, rinse the affected area promptly with plenty of water
